The Farm

Karatsu, in Saga, Japan.

A coastal town on the southwestern edge of the country. Here, one family cultivates a chilli grown nowhere else, without synthetic pesticides or chemical fertilisers. The seed has never left the farm.

Our Commitments

A long-term partnership

An exclusive, long-term agreement with the farm supports the economic foundation that keeps this heritage chilli in cultivation.

A short, dedicated chain

We work directly with the farm and supply chefs through a single channel, returning more value to the small-scale producers behind each product.

Lower-impact distribution

Our dry-spice format ships at ambient temperature and stores for months, removing the need for cold-chain logistics. A small amount delivers depth, so little is wasted.

Considered packaging

Glass and paper are our primary materials, with plastic kept to a minimum. Each box is sized to its bottle to avoid shipping waste.

Origin, openly stated

Every product names the origin of its key ingredients: the heirloom chilli and yuzu from Karatsu, Saga, and the principal spices and salt in our blends. Each carries its origins on the label.
