A meeting of two regions: naturally cultivated wheat from Yamagata and heirloom chilli from Karatsu.
Dried wheat noodles made with YUIICHIMI chilli from Karatsu and naturally grown wheat from Chiba Kichi in Yamagata. The chilli is kneaded directly into the dough, giving a gentle heat with every bite.
Made without soup powder, these noodles are designed to be flexible for chefs: serve them in broth, chilled, or with oil-based sauces.

The chilli noodles we had long wanted to make have finally taken shape. A gentle heat spreads with every bite. After boiling, rinse them in cold water to bring out their firm texture and clean finish.
WHEAT FROM CHIBA KICHI
The wheat is naturally grown by Chiba Kichi in Yamagata, without relying on fertilisers or pesticides. Their approach draws out the natural strength of the soil and the plant itself.
